I sent a selection of their stuff to my sister's family for Christmas. Waiting to hear if it's any good.
I prefer my bacon not crisp. My wife on the other hand only seems to know how to cook it crisp/black.

Partially cooked bacon wrapped around shrimp, then finished on the grill or in the oven. Or, wrapped around a stuffed jalapeño...
might have to make a trip to the grocery store.

medium cooked bacon,2-3 slices, wrapped around a nice sized chicken breast sliced in the middle stuffed with thin sliced cooked ham and pepper jack cheese. Bake at 300 for 15 min.
Yep ,salad and green beans and ya got a meal. Cheap too.
BLT HAS to have crispy bacon.

Only thing I use the commercial thin stuff for is for wrapping. Oscar Mayer is really thin so it cooks completely. Mostly use it for ABT's (atomic buffalo turds). Basic recipe is jalapenos seeded then filled with cream cheese wrapped w/ bacon then smoked for an hour).
For the thick stuff I bought slabs from a local smokehouse for years. Since getting into BBQ I don't eat much bacon. Good BBQ hits all the same flavor notes. I've been liking a BLT made with chopped "burnt ends" from a brisket better than bacon for the last few years.
Belly bacon (US style) and loin bacon (Canadian style) are neither one "real" bacon. Both are both real good, but at different things.

When it finally ran out I called them back, they'd sold out to a competitor that no longer carried the same product. :mad:

Best I even had was from the Little Salmon store just upriver from of Riggins, ID. Loren Overlander established the store in 1925 and was still there the day I walked in the fall of 1973. The smell of that bacon on the fire in a cast iron pan on a crisp morning along with a pot of boiled coffee was the best wake up call ever. :thumbup:

I'm trying to use The Google, and coming up empty. :confused: The man passed away in the pre-internet early 80's. Also, this is about as far off the beaten path as you can get in the lower 48.
There is only one google reference to the Little Salmon Store, It's 25yrs out of date and they got his name wrong. :gomer: It makes reference to his little museum next to the store, but they have his name wrong. Because he was early on the scene (just 21yrs after Chief Joseph passed) his collection of Nez Perce items was impressive. As remote as that country still is today I can't imagine how isolated it was in 1925 when they set up and ran the store out of a bit canvas campaign tent. :eek:

What I'm thinking about though is smoked or slow grilled chorizo filled dates in bacon, kind of like ABT's with a dates instead of a jalapeno and chorizo instead of cream cheese and pulled pork... mmmmm

It's always been fascinating to me that people that can't agree on anything else, not even what the word bacon describes, do agree that you have to use soft white bread. Same with BBQ. Even people that eat artisan bread every day want balloon bread or soft buns for their BBQ.

The small bakeries around here can make damn bbq buns as well as "artisan bread". Sorry to confuse the discussion with an offensive generic term. Make that soft white bread and buns. The point is that most people prefer the bread soft and the meat to have a bit of crunch when if comes to smoked pork products.
If you want yours on brioche or ciabatta I'm sure it'll be fine. Multigrain hard roll not so much...:yuck:
