On the grill that is . . . .

I'm going to try some of these flat iron steaks onthe grill. $4.99 / lb.

I also have some venison back strap and loin in the freezer I need to cook. Wrap it in BACON and toss on the fire for a few minutes.

Maybe some BACON wrapped shrimp with a slice of monterey jack cheese and a slice of jalapeno.

I'm also going to "season" my new plow disk wok. Can't wait to get some cooking going in this thing!!

I usually throw ribs in the smoker for Memorial and my parents bring the local farm corn (Frasiers) that is absolutely THE BEST corn I have ever had in my LIFE!

I'm debated on whether to switch it up though and do a bushel of blue's. I usually have that on fathers day as it is my favorite food in the world.

Maybe I'll do both. I always have the family over for the 500. I print out little picture of the cars and we draw them from a hat. Everyone gets 3 to 5 pulls for $2 a piece and we do a half way winner and an over all winner. A family tradition dating back to the 60's on the years we didn't actually go.

Sounds like a good time. Those crabs look good but too much work for my liking. I prefer these. We boiled a few sacks last month. I could go for some more.

Now your talking! I lived in NO many years ago and I don't think a month goes by I don't pine for a real mud bug boil. I was even talking about that with my dad the other day pondering if we could find a fish monger who could ship us in a big ol' bag. :D

Love it. If it doesn't rain, we're firing up the burner and doing a boil- mussels, clams, scrimps, corn & potatoes mostly, but maybe some blue crab if I can make it out to the Bay tomorrow afternoon (and if there's any left). If it does rain, we'll go simple and grill up some ribeyes & corn.

Either way, there's a sixtel of Two-Hearted carbonating as we speak.

Hopefully I'm not burning anything. :) I'll be doing the standard burgers and brats for mid-day snackage, and thinking smoking a brisket for Sunday and mebbe some steaks for Monday. Might hafta look for other veggies for roasting, and corn appears to be in short supply again this season. By contrast, Wegman's had a ton of corn while I was in DC this week.

And where is corn grown and ready to eat this time of year? Brazil? Florida even? Got to be crap.

Dando, from your time on the Jersey Shore you must know the only corn fit for human consumption is super sweet Silver Queen cooked within hours of picking from some field in Jersey. :D

Candy, firm off the cob but melts in your mouth. They just planted it two weeks ago and won't be ready until July.

With a side of fresh slices Jersey tomato, NY/Philly fresh mozzarella, fresh basil with a drizzle of EVO, it is the perfect summer complement to any grilled carne. :D

BTW if you haven't had fresh Jersey corn and tomato, do it.

That's because Wegmans friggin rocks! Their produce is really superior to those found at other grocery stores in my area.

AL, of course, but this time of year, ya gotta take what ya can get. Jersey corn is quite good, and there is some corn from CO that is also quite sweet ala silver queen. We also have a few locals that have very good sweet corn as well. My point was that we usually start seeing corn around this time of year, but it is in short supply for obvious reasons. The recent Kroger ad has it advertised for 4 for $1. Used to be 10 for a $1 the past few years...not too long ago a dozen for a $1.

Anyway, I usually roast the corn this time of year for a completely different flaver flave, yo. Perhaps even for corn salad.

Oh, and dats EVOO, yo yo. :gomer:

Jersey corn is infamous and I'm not exaggerating about this FL corn. The farm has a mailing list that informs their customers when they harvest (in my family we actual count down the days). The first harvest was this past Tuesday. They bring it in from the field in a three walled trailer and everyone just dives in to dig out their choice ears.

It's in Brooksville, north up the Suncoast Parkway. This first harvest is their cream of the crop, Sweet Yellow which is to die for. They also do a mix and a white which are good, but not like their sweet yellow (and I used to think nothing could touch Jersey Silver Queen). I'll give you exact directions if you are interested.

You're suggesting someone from Ohio should get their sweet corn from Jersey? :saywhat:

Hardly anyone grows actual Silver Queen these days. A lot of places call it that, but they're usually newer hybrids.

Jersey corn is infamous and I'm not exaggerating about this FL corn. I'm sure you're not. It's not magic, they just care enough to plant the good stuff. After you taste the newer super sweet varietals everything else tastes like you're eating newspaper doesn't it...? :D

It's gonna be Baja fish tacos (grilled fish, shredded cabbage, crema, diced heirloom tomatoes on fresh made tortillas) with whatever kind of rockfish looks good at the farmers market and some skirt steak to make for carne asada for the carnivores.

Costco frozen corn, (not on the cob, kernels in a big ole bag). It is the supersweet variety, everything else tastes like feed corn in comparison. I usually don't eat corn on the cob unless it is the local fresh stuff. The problem this year is it has been very cool and the soil temperature isn't even close to 60°F which some of the sweets require. Once it gets into the ground it will be another ~80 days which puts the first local harvests at mid August...

Andrew Longman

Because we only get sweet corn for about 8-10 weeks a year, I pack it away while I can. That means mixing it up a little.

One of my favorites is soaking and roasting in the husks. Then squeezing fresh lime juice and chili powder on it. You can add a little butter and sea salt to that if you like. Depends on the mood.

Of course the Garden State has a little rivalry over who has the better produce. Personally, I think it is pretty clear NW Jersey has the better corn, tomato and peaches while South Jersey/Jersey shore has the best strawberries and blueberries, though they brag on their corn too.

True, because the hybrids hold there sweetness longer. And many are quite good.

True Silver Queen should be eaten within ours of picking. I get mine from a farm stand down the road that picks a couple of bushels several times a day. When he runs out, he just walk back into the field and gets more.

what's your preferred marinade on the skirt?

Soy sauce, a little bit of lemon juice, and little picante sauce for that extra kick.

The soy sauce will tenderize the meat.

Together with bell peppers, different colors, lots of onion and garlic, and a pinch of salt.
