Here's some of my favorite new finds.

OK, here my current favorite sauce, Dragonfart's Wet 'n Reddy BBQ Sauce & Hair Conditioner. This is a great tasting mango/chipotle sauce that works well for most meats, but particularly poulty and pork. The combination of the fruit and the smokey chipotle flavors is an instant classic. Some time back G. asked if this sauce will cover up the dynamite taste in fish, but I haven't been fishing since last fall... ;) They do have two increasingly hotter versions with habanero in them, but unless you're a serious chilehead, and are after really serious heat, don't bother. A habanero is around 10 times hotter than a jalapeno.

They also have a product called Ziggy's Colon Blow :eek: which is a sesame garlic paste. No idea if the colonic calamity promised by the name is true, but it didn't sound like all that tempting a prospect...

If you are still using charcoal briquettes with all the adulterated ingredients and binders (and off flavers), consider trying some natural lump charcoal. The Naked Whiz has put together reviews, rankings and information about most every brand of lump on the market. My current favorite is Kamado Extruded lump, which is made from coconuts, burns twice as long as anything else I've tried, but is a serious challenge to light.

As long as you are getting rid of the briquettes (and you really should) with their bad tasting petroleum ingredients, here's a way to do away with lighter fluid or newspapers for ever as well. It takes around 2 minutes to get the whole affair under way with one of these cane torches. One $2.50 tank of propane from the grocery store will last all summer. Just don't burn the place down trying to burn the ants out of your porch or sumthin silly. I don't need any calls from angry wives, unless of course they are good looking and your insurance was paid up...

If you are moving large pieces of hot meat, tools are not the way to go. Get a pair of these and use your hands. Also great for picking up a hot grill and during a cook to add coal or smokewood. They are food grade, inexpensive, and you can reach right into boiling water or handle hot coals with them and not get burned. Man, I wish I had known about these 20yrs ago... I took a 16lb. turkey off the grill last month, and nothing could have been easier.

Spread butter over the top of a head of cauliflower and sprinkle generously with garlic salt. Wrap tightly in aluminum foil and throw it on the grill for 30 minutes, buttered side up.

My favorite BBQ toy is my Weber Smokey Mountain Kettle. When I got that, my BBQ went to a whole other level. Ribs, brisket, pork shoulders, sausages... yum. :cool:

Skinless, boneless, chicken breasts that is.

Marinated in a tabasco sauce, spices and a dash of lemon pepper mixture overnight.

You think it would work coated with olive oil in a perforated grill wok or if you punched holes in the foil to let smoke in Chop, or is it steaming itself in the foil?

I believe it is being steamed in the foil. I have done it with green onions and some other vegetables.

Also to Bake potatoes this way, wrapped in foil with a bit of butter and placed directly on the grill, is a delicious treat.

I think a grill wok and olive oil would work fine, you're just going to get a grilled/sauteed product instead of steamed. The foil process IS steaming the cauliflower, but you could probably unwrap it near the end of the cooking time to give it some smoke. I wouldn't punch holes in the foil at the beginning of cooking, though. It's cheap stuff, though. Why not try both?
